  • 1/2 cup chicken broth
  • 1 cup barbecue sauce (divided)
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 diced onion
  • 2 cloves minced garlic

Instructions

  1. Season chicken with salt, pepper, and spices; let sit for 10 minutes.
  2. Add chicken broth to the Instant Pot. Layer seasoned chicken on top, followed by half the barbecue sauce, onion, garlic, apple cider vinegar, and Worcestershire sauce.
  3. Secure the lid and cook on high pressure: 15 minutes for thighs or 12 minutes for breasts.
  4. Allow natural pressure release for 10 minutes before quick-releasing remaining steam.
  5. Shred cooked chicken using forks and mix in remaining barbecue sauce; sauté on low heat for 2–3 minutes until thickened.
