- 2 medium sweet potatoes
- 1 large yellow onion
- 1 tablespoon olive oil
- 1 medium head broccoli
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce (divided)

Instructions
- Preheat your oven to 400°F.
- Chop sweet potatoes into 1/2" chunks and onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder on a lined baking sheet. Bake for 20 minutes.
- Add chopped broccoli to the baking sheet and push sweet potatoes aside. Place chicken breasts on the pan and brush with BBQ sauce. Bake for an additional 15-20 minutes until cooked through.
- Shred the chicken on the baking sheet using two forks and mix with remaining BBQ sauce. Divide into bowls and serve.
