  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)
  • salt
  • garlic powder
  • chipotle powder

Instructions

  1. Preheat your oven to 400°F.
  2. Chop sweet potatoes into 1/2" chunks and onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder on a lined baking sheet. Bake for 20 minutes.
  3. Add chopped broccoli to the baking sheet and push sweet potatoes aside. Place chicken breasts on the pan and brush with BBQ sauce. Bake for an additional 15-20 minutes until cooked through.
  4. Shred the chicken on the baking sheet using two forks and mix with remaining BBQ sauce. Divide into bowls and serve.
