  • Mustard (for binder)
  • Pepper-forward brisket rub
  • Hickory pellets (for smoking)
  • 2 whole onions
  • Avocado oil
  • Kosher salt
  • Unsalted butter
  • Sourdough bread
  • Colby jack cheese
  • Provolone cheese
  • Fried crispy onions
  • BBQ sauce

Instructions

  1. Prepare the brisket by trimming fat and applying mustard as a binder. Season with brisket rub and refrigerate for 1-2 hours.
  2. Smoke the brisket on a pellet smoker at 210°F until it reaches an internal temperature of 165-170°F (9-10 hours). Wrap in butcher paper with apple cider vinegar and beef tallow, then continue smoking at 250°F until internal temp hits 204-206°F.
  3. Rest the brisket wrapped in butcher paper for 2-3 hours.
  4. Sauté diced onions in avocado oil with kosher salt and butter until caramelized.
  5. Assemble melts using sourdough bread, fried onions, sliced brisket, caramelized onions, cheeses, and BBQ sauce.
  6. Toast the sandwiches in a cast iron skillet with butter over medium heat until golden brown and cheese melts.
