- 4 boneless, skinless chicken breasts
- ¼ cup honey
- 1 tablespoon Dijon mustard
- 1 tablespoon yellow mustard
- 1 tablespoon wholegrain mustard
- ½ teaspoon white vinegar
- 2 tablespoons olive oil
- Seasoning blend (to taste)
- Optional: Fresh rosemary for garnish
Instructions
- Preheat your oven to 375°F.
- Lightly grease a 9×13 baking dish with cooking spray.
- In a skillet, heat 1½ tablespoons of olive oil over medium heat. Season the chicken breasts and sear them for about 2 minutes on each side until browned.
- In a bowl, whisk together the remaining olive oil, honey, Dijon mustard, yellow mustard, wholegrain mustard, white vinegar, and paprika until smooth.
- Transfer the seared chicken to the prepared baking dish and pour the honey mustard sauce over it.
- If desired, add fresh rosemary sprigs between the chicken pieces.
- Cover with foil and bake for 20 minutes; then remove foil and bake for an additional 15 minutes until the internal temperature reaches 165°F.
- Let rest for 5 minutes before serving.
