  • 4 cloves garlic (minced)
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 cup heavy cream
  • 1 pint cherry tomatoes
  • ½ cup Parmesan cheese (grated)
  • 8 oz spaghetti
  • Fresh parsley (for garnish)

Instructions

  1. Cook the bacon in a large skillet over low heat until crispy. Remove and set aside, reserving 1 tablespoon of drippings.
  2. Sauté minced garlic in the reserved drippings until fragrant.
  3. Deglaze the pan with chicken broth, scraping up browned bits.
  4. Add remaining broth, tomato paste, seasonings, and heavy cream to create the sauce.
  5. Simmer with cherry tomatoes and room temperature cream cheese until combined.
  6. Cook spaghetti according to package directions; drain one minute early.
  7. Toss pasta into the sauce using kitchen tongs, allowing it to absorb flavors.
  8. Serve garnished with chopped bacon and parsley.
