  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce (for serving)

Instructions

  1. Preheat the oven to 350°F (180°C). Prepare a 9-inch springform pan by wrapping it with foil and greasing it.
  2. In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and melted butter to form the crust. Press into the bottom of the pan.
  3. For the apple filling, peel and slice apples, toss with brown sugar and cinnamon, then set aside.
  4. For the cheesecake filling, beat together room temperature cream cheese, sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth.
  5. Layer half of the cheesecake mixture over the crust, followed by the apple filling. Top with remaining cheesecake mixture.
  6. Prepare an oatmeal crumble using flour, brown sugar, cinnamon, oats, and melted butter; sprinkle on top.
  7. Bake in a water bath for about 60 minutes or until set. Cool gradually before refrigerating overnight.
