- 1 teaspoon vanilla extract
- 1/2 cup sour cream (room temperature)
- 3 large eggs (room temperature)

Instructions
- Preheat the oven to 350°F (180°C). Prepare a 9-inch springform pan by wrapping it with foil and greasing it.
- In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and melted butter to form the crust. Press into the bottom of the pan.
- For the apple filling, peel and slice apples, toss with brown sugar and cinnamon, then set aside.
- For the cheesecake filling, beat together room temperature cream cheese, sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth.
- Layer half of the cheesecake mixture over the crust, followed by the apple filling. Top with remaining cheesecake mixture.
- Prepare an oatmeal crumble using flour, brown sugar, cinnamon, oats, and melted butter; sprinkle on top.
- Bake in a water bath for about 60 minutes or until set. Cool gradually before refrigerating overnight.
