Ingredients
- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–¾ cups all-purpose flour
- Spices: ground cinnamon, allspice, baking powder, baking soda, kosher salt
Instructions
- Preheat oven to 350°F. Prepare a 9” square baking dish with butter and parchment paper.
- In a sauté pan, boil apple cider until reduced by half (about 5 minutes). Whisk in diced butter.
- In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt.
- Combine the boiled cider mixture with the wet ingredients. Stir in flour until just combined.
- Pour batter into the prepared dish and bake for 22–25 minutes until golden.
- Cool slightly before brushing melted butter on top and sprinkling with cinnamon sugar.
