  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1¾ cups all-purpose flour
  • Spices: ground cinnamon, allspice, baking powder, baking soda, kosher salt

Instructions

  1. Preheat oven to 350°F. Prepare a 9” square baking dish with butter and parchment paper.
  2. In a sauté pan, boil apple cider until reduced by half (about 5 minutes). Whisk in diced butter.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Combine the boiled cider mixture with the wet ingredients. Stir in flour until just combined.
  5. Pour batter into the prepared dish and bake for 22–25 minutes until golden.
  6. Cool slightly before brushing melted butter on top and sprinkling with cinnamon sugar.
