Ingredients
- 4 tablespoons butter
- ½ medium onion (chopped)
- 2–3 cloves garlic (minced)
- 4 tablespoons all-purpose flour
- 2 cups low sodium chicken or vegetable stock
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon paprika (optional)
- 3 cups broccoli florets
- 1 large carrot (grated or chopped)
- 2 cups half & half
- 8 ounces grated cheddar cheese
Instructions
- In a large pot, melt butter over medium-high heat. Sauté onion until softened, about 3-4 minutes. Add garlic and sauté for another minute.
- Stir in flour and whisk continuously for 1-2 minutes until golden. Pour in chicken stock along with broccoli, carrots, salt, pepper, and paprika. Bring to a boil, then reduce heat to medium-low and simmer for about 15 minutes.
- Stir in half & half followed by grated cheddar cheese. Simmer until cheese is melted and well combined.
