  • 4 tablespoons butter
  • ½ medium onion (chopped)
  • 23 cloves garlic (minced)
  • 4 tablespoons all-purpose flour
  • 2 cups low sodium chicken or vegetable stock
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (optional)
  • 3 cups broccoli florets
  • 1 large carrot (grated or chopped)
  • 2 cups half & half
  • 8 ounces grated cheddar cheese

Instructions

  1. In a large pot, melt butter over medium-high heat. Sauté onion until softened, about 3-4 minutes. Add garlic and sauté for another minute.
  2. Stir in flour and whisk continuously for 1-2 minutes until golden. Pour in chicken stock along with broccoli, carrots, salt, pepper, and paprika. Bring to a boil, then reduce heat to medium-low and simmer for about 15 minutes.
  3. Stir in half & half followed by grated cheddar cheese. Simmer until cheese is melted and well combined.
  4. Serve hot with toasted bread or in a bread bowl.
