  • 2 cups cooked jasmine rice (cold & day-old)
  • 1 green onion (finely chopped)
  • 2.5 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pan or wok until hot.
  2. Pour in the beaten eggs and quickly stir-fry until they begin to set but remain moist.
  3. Add the cold rice, breaking apart any clumps with a spatula.
  4. Move the mixture aside and add more oil along with green onions into the empty space; mix well.
  5. Drizzle soy sauce and sesame oil around the edges, tossing everything together until evenly combined and warmed through.
